450-600 g beef fillet 1 large yellow onion 4 egg yolks 1.5 tbsp Dijon mustard 2.5 tbsp Swedish sweet mustard 5-6 drops Worcestershire sauce (can be omitted) 4 tsp HP sauce (can be omitted) 1 tsp salt 3 tsp white pepper 1 bunch parsley
Peel the beef fillet and cut it into 2×2 cm pieces.
Finely chop the onion. Brown the onion in a frying pan without it taking on color.
Mix the beef fillet with the onion, egg yolks, mustard, Worcestershire sauce, HP sauce and season with salt and white pepper.
Fry the beef fillet mixture in rapeseed oil and butter over medium heat for about 4-5 minutes. Stir occasionally. The meat should be slightly pink in the middle. Season with salt and white pepper.
