Spinach soup with egg halves

Spinach soup with egg halves is a cheap and healthy meal. Can also be combined with e.g. sausage, cooked meatballs for a heartier soup. A good accompaniment is a piece of coarse bread with hard cheese.

Recipe: Spinach soup with egg halves

4 servings

400 g frozen chopped spinach

9 dl water

1-2 tbsp all-purpose flour or wheat flour

2 vegetable stock cubes

2 tbsp onion powder

2 tsp garlic powder

1 tsp grated nutmeg

3 dl cream

2 tsp salt

1 tsp white pepper

Defrost the frozen spinach in a saucepan with water (9 dl).

Whisk in the flour.

Add the other ingredients and let the soup simmer for 5 minutes.

The taste of the soup is enhanced with a knob of butter (15-25 grams).

Season with salt and pepper.

To serve

Boiled egg halves.

And or: sausages, cooked meatballs, etc.
