Delicious, hearty and warming soup where cabbage and ground beef are the main ingredients. Ground beef and bacon add a good flavor and umami. As usual, soups and stews only taste better if they are allowed to rest for a day before we eat them. A piece of wholemeal bread is also good.
Recipe: Cabbage soup with minced beef

700 g white cabbage 500 g minced beef 125 g bacon 1 yellow onion 1 carrot 1 parsnip 1 piece celeriac 10 cm leek 2 cloves garlic 2 tbsp tomato puree 1 can crushed tomatoes 2 dl red wine 8 dl water 2 beef stock cubes 1 tsp dried oregano 1 tsp dried thyme 2 bay leaves 2 tsp black pepper 1 tsp salt 1 tsp granulated sugar
Cut the white cabbage into coarse pieces (3 x 3 cm) and brown the cabbage lightly in a frying pan.
Cut the bacon into pieces.
Finely chop the vegetables.
Fry the bacon and minced meat in a pot.
Add the vegetables to the pot and sauté with the minced meat for a few minutes. Add the tomato puree and sauté for a few more minutes.
Add half of the cabbage and all other ingredients to the pot.
Bring to a boil and simmer covered for 60 minutes.
